Looking for easy keto chaffles to make for breakfast? These low carb sweet peanut butter waffles are killer! They are also a welcome change from the typical keto breakfast. You can make them with any sugar-free nut butter that you’d like.
Ingredients:
- 1 egg
- 2 tbsp peanut butter or nut butter (without added sugar)
- 1/3 cup shredded mozzarella cheese
- 1 tbsp monk fruit (or low carb sweetener of your choice)
- 1/2 tsp vanilla extract

Preheat your mini waffle maker and mix everything together in a small bowl.

Use a non-stick spray to grease the waffle maker and then pour HALF of the batter in. Allow it to cook for 3-4 minutes or until the automatic timer or lights goes off; repeat for next waffle.
