This Fideo with potatoes and ground beef is a comforting, flavorful dish made with fideo (vermicelli pasta), ground beef, potatoes, and a rich tomato-based broth. It’s a perfect meal for a cozy day, hearty and satisfying, yet simple and quick to make!
Ingredients
- 1 lb ground beef
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 large tomato (chopped) or 1 can (14.5 oz) diced tomatoes
- 2 medium potatoes (peeled and diced)
- 1 1/2 cups fideo pasta (or vermicelli pasta broken into small pieces)
- 4 cups beef broth (or water)
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp chili powder (optional, for a little heat)
- 1/2 tsp ground black pepper
- Salt to taste
- 2 tbsp vegetable oil (for frying)
- Fresh cilantro (chopped, for garnish)
- Lime wedges (for serving)
Instructions
Cook the Ground Beef:
In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes.
Add the chopped onion and minced garlic to the beef, and sauté for 3-4 minutes until the onion is soft and translucent.
Prepare the Tomato Base:
Add the chopped tomato (or canned diced tomatoes) and tomato paste to the pot. Stir well and cook for 3-4 minutes until the tomato softens and combines with the meat mixture.
Add the cumin, chili powder (if using), black pepper, and salt to taste. Stir to combine and cook for another minute to let the spices release their flavors.
Cook:
Add the diced potatoes and beef broth (or water) to the pot. Stir to combine, bring the mixture to a boil, and then reduce the heat to low. Let it simmer for about 10 minutes, or until the potatoes are tender.
Add the Fideo:
Add the fideo pasta to the pot and stir to mix. Let the soup simmer for an additional 5-7 minutes, or until the pasta is cooked and the soup has thickened slightly. Stir occasionally to prevent the pasta from sticking to the bottom.
