Creamy Tuscan Shrimp

If you love Italian flavors and creamy sauces, this Creamy Tuscan Shrimp is a must-try. It features juicy shrimp cooked in a silky, garlicky cream sauce with sun-dried tomatoes, spinach, and fresh herbs. It’s perfect for a quick weeknight dinner but tastes like something special.

This dish pairs wonderfully with pasta, rice, or crusty bread to soak up the delicious sauce. Plus, it’s low-carb if you serve it over zucchini noodles or cauliflower rice.


Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

1. Cook the Shrimp
Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.

2. Make the Sauce
In the same pan, add garlic and sauté until fragrant (about 30 seconds). Pour in chicken broth and bring to a simmer.

3. Add Cream and Tomatoes
Stir in heavy cream, sun-dried tomatoes, and Italian seasoning. Let the sauce simmer gently for 3-5 minutes, until it thickens slightly.

4. Add Spinach and Cheese
Add fresh spinach and cook until wilted. Stir in Parmesan cheese until the sauce is creamy and smooth. Taste and adjust seasoning.

5. Combine and Serve
Return shrimp to the pan, toss in the creamy sauce until coated. Heat through for a minute.

Garnish with fresh basil or parsley if you like. Serve over pasta, rice, or low-carb alternatives.


Tips & Tricks

  • Use fresh or frozen shrimp, but thaw completely before cooking.
  • Sun-dried tomatoes add a sweet, tangy flavor—don’t skip them!
  • If sauce is too thick, add a splash more chicken broth or cream.
  • Fresh spinach wilts quickly—add it last to keep its color and texture.
  • Parmesan cheese gives the sauce a rich, cheesy flavor—grate it fresh if possible.

Instructions

  1. Cook shrimp in olive oil until pink; remove.
  2. Sauté garlic in same pan; add broth and simmer.
  3. Stir in cream, sun-dried tomatoes, and seasoning; simmer 3-5 mins.
  4. Add spinach and Parmesan; stir until smooth.
  5. Return shrimp to sauce; heat through and serve.
