Chicken Zucchini Fritters

What makes this recipe even better is that it can be cooked on the stovetop, in the oven, or even in the air fryer for a lighter option. It’s also an excellent way to sneak vegetables into meals for picky eaters.

Ingredients:

  • 1 medium zucchini, grated
  • 1 pound (450 g) ground chicken
  • 2 eggs
  • ½ cup breadcrumbs (or almond flour for low-carb)
  • 2 garlic cloves, minced
  • ½ small onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. Grate the zucchini and squeeze out excess water using a clean kitchen towel or cheesecloth.
  2. In a mixing bowl, combine grated zucchini, ground chicken, eggs, breadcrumbs, garlic, onion, parsley, paprika, salt, and pepper. Mix until well combined.
  3. Shape the mixture into small patties or fritters.
  4. Heat olive oil in a skillet over medium heat.
  5. Fry fritters for 3–4 minutes on each side, until golden brown and fully cooked inside.
  6. Place on paper towels to drain excess oil.
  7. Serve hot with sour cream, yogurt dip, or your favorite sauce.

Tips & Tricks

  • Squeeze zucchini well to avoid watery fritters.
  • Use almond flour instead of breadcrumbs for a keto-friendly version.
  • Add shredded cheese to the mixture for extra flavor.
  • These fritters can be baked or air fried if you prefer less oil.
  • Leftovers can be stored in the fridge for 2–3 days and reheated in the oven or air fryer.
