Preheat Air Fryer: Preheat your air fryer to 180°C (356°F) for about 5 minutes.
Prepare Dry Ingredients: In a large bowl, combine the self-raising flour, baking powder, and a pinch of salt.
Add Butter: Add the cubed butter to the dry ingredients and rub it in with your fingers until the mixture resembles fine crumbs. Stir in the caster sugar.
Prepare Wet Ingredients: In a separate jug, warm the milk in the microwave for about 30 seconds. Add the vanilla extract and a squeeze of lemon juice, then set aside.
Combine and Knead: Make a well in the dry mix, pour in the liquid, and quickly combine with a cutlery knife. The dough may seem wet at first. Transfer the dough onto a floured surface, dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it’s smoother.
Shape and Cut: Pat the dough into a round about 4cm deep. Use a 5cm cutter to cut out scones. Dip the cutter into flour to prevent sticking. You can reroll the dough to cut more scones if needed.
Brush with Egg and Air Fry: Brush the tops of the scones with beaten egg. Place the scones in the air fryer basket, leaving space between each. Air fry at 180°C (356°F) for approximately 8-10 minutes or until risen and golden on top.
Serve: Let the scones cool a bit before serving. Enjoy them warm or cold with jam and clotted cream.
