Crispy Cottage Cheese Garlic Bread – Pull Apart Style

If you love garlic bread, this pull-apart version with cottage cheese will quickly become a favorite. It’s cheesy, garlicky, and crispy on the outside, while staying soft and fluffy inside. The pull-apart style makes it fun to serve at family dinners, game nights, or parties, because everyone can grab a piece straight from the loaf.

This recipe uses a crusty loaf of bread (like sourdough or French bread), garlic butter, and cottage cheese for a creamy, slightly tangy flavor. When baked, the cottage cheese melts into the bread, creating a delicious cheesy pull-apart texture.

You can serve it as an appetizer, a snack, or alongside pasta, soups, or grilled meats. It’s quick, simple, and always a crowd-pleaser.

Ingredients

  • 1 loaf crusty bread (French bread or sourdough)
  • 1 cup cottage cheese
  • 4 tablespoons butter (softened)
  • 3–4 garlic cloves (minced)
  • 1 tablespoon fresh parsley (chopped)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella or cheddar (optional, for extra cheesiness)

Instructions

  1. Prepare Bread: Place the loaf on a cutting board. Slice it into a grid pattern — cut deep slits both lengthwise and crosswise, but don’t cut all the way through. The loaf should stay connected at the bottom.
  2. Make Garlic Butter: In a small bowl, mix softened butter, garlic, parsley, salt, and pepper.
  3. Fill the Bread: Gently pull apart the bread sections. Spread garlic butter into the cuts. Spoon cottage cheese into the gaps, and if using, sprinkle mozzarella or cheddar inside.
  4. Wrap & Bake: Wrap the whole loaf in foil. Bake at 180°C (350°F) for 15–20 minutes.
  5. Crisp the Top: Open the foil and bake another 5 minutes to make the bread crispy and golden.
  6. Serve: Place on a serving plate and let everyone pull apart pieces of cheesy garlic bread.

Tips & Tricks

  • For extra flavor, add chili flakes or Italian seasoning to the garlic butter.
  • Use full-fat cottage cheese for a creamier texture.
  • You can prepare it ahead of time and bake just before serving.
  • Swap mozzarella for parmesan if you like a sharper cheese flavor.

  • Best served warm and fresh from the oven.
  • Leftovers can be reheated in the oven or air fryer for 5 minutes until crispy again.

  5. Uncover and bake 5 more minutes until golden and crispy.
  6. Serve warm, pull apart, and enjoy.
