Ingredients
- 1 lb ground beef
- 3 medium potatoes, peeled and diced
- 1/2 onion, chopped
- 2-3 roasted green chiles (Hatch or Anaheim), chopped
- 1 garlic clove, minced
- 1 teaspoon cumin
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 ½ cups beef broth (or water)
- 1 tablespoon tomato sauce (optional)
- 1 tablespoon oil
Directions
1️⃣
Cook the Beef
Heat oil in a large skillet over medium heat.
Add the ground beef and cook until browned.
Drain excess grease if necessary.

Sauté the Aromatics
Add chopped onion and garlic to the beef.
Cook for 2 minutes until fragrant.
3️⃣
Add Potatoes & Green Chiles
Stir in the diced potatoes and chopped roasted green chiles.
Season with cumin, salt, pepper, and oregano.
4️⃣
Simmer & Cook
Pour in the beef broth (or water) and tomato sauce (if using).
Cover and let it simmer for
15-20 minutes, stirring occasionally, until potatoes are tender.
5️⃣
Serve & Enjoy
Taste and adjust seasoning if needed.
Serve hot with warm tortillas, rice, or beans.
