Chicken Lo Mein

Ingredients

  •  1 ½ – 2 pounds chicken thighs, cubed
  •  1 green bell pepper, sliced
  •  1 yellow onion, sliced
  •  8 ounces brown mushrooms, sliced
  •  1 (16-ounce) bag broccoli slaw
  •  4 cloves garlic, minced
  •  1 (14-ounce) box lo mein noodles, cooked
  •  1 cup teriyaki sauce
  •  ⅓ cup brown sugar
  •  Salt and pepper, to taste
  •  Vegetable oil, for the griddle
  •  Sesame seeds, optional

Directions

  1. Preheat Blackstone griddle to medium-high heat. Drizzle vegetable oil then add the onion, bell pepper, mushrooms, chicken, and broccoli slaw. Cook for 10-15 minutes until the vegetables are tender and the chicken is fully cooked. Season with salt and pepper.
  2. Add the noodles and garlic to the griddle. Mix and cook for 2 minutes until the garlic is fragrant.
  3. Sprinkle the brown sugar and pour the teriyaki sauce over the top of the lo mein. Stir with spatulas until a sauce is created coating the lo mein. Remove from the griddle and place on a large serving plate. Top with sesame seeds if using. Serve immediately.
