Ingredients
- 3 Bone-in Pork Chops 1 1/2-2 inches thick
- 3 tbsp Brown Sugar
- 1.5 tbsp Paprika
- 1.5 tsp Kosher Salt
- 1.5 tsp Black Pepper
- 1.5 tsp Ground Mustard
- 1.5 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 2 tbsp Olive Oil

Preheat air fryer to 400 F.

Pat dry pork chops with paper towel.

In a small bowl, mix together all the dry ingredients.

Coat bone-in pork chops with olive oil and rub over the spice mix with your hands.

Cook bone-in pork chops in air fryer for 12 minutes, flipping pork chops over after 6 minutes.
For the Scalloped Potatoes:
- 4 large potatoes, peeled and thinly sliced
- 1 medium onion, thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Make the Scalloped Potatoes:
- In the skillet, melt butter over medium heat.
- Add sliced onions and cook until softened.
- Sprinkle flour over the onions and stir to form a roux.
- Gradually whisk in milk until the mixture thickens.
- Add shredded cheddar cheese, stirring until melted.
- Season the sauce with salt and black pepper to taste.
- Layer half of the sliced potatoes in the skillet.
- Pour half of the cheese sauce over the potatoes.
- Repeat the layers with the remaining potatoes and cheese sauce.
