Cheeseburger Casserole

This easy  cheeseburger casserole is hearty and filling and makes a wonderful low carb alternative to a cheeseburger.

INGREDIENTS

  • Olive oil spray for the baking dish
  • 2 tablespoons olive oil
  • 2 lb. extra lean ground beef
  • 1 medium onion finely chopped (6 oz)
  • 2 teaspoons Diamond Crystal kosher salt or 1 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon minced garlic
  • 1/4 cup avocado oil mayo
  • 1/4 cup unsweetened ketchup
  • 1 tablespoon mustard
  • 1 1/2 cup shredded sharp cheddar divided (6 oz)

INSTRUCTIONS:

  1. Preheat the air fryer to 400 degrees F.
  2. Spray the air fryer basket with olive oil.
  3. Heat the olive oil in a skillet on the stove over medium-high heat for about 2 minutes. Add the beef and onions. Cook, breaking up the beef, until browned and the onions are soft, approximately 5 minutes.
  4. If there’s excess liquid in the skillet, drain it before returning the mixture to the skillet.
  5. Stir in kosher salt, black pepper, and garlic. Cook and stir for an additional minute.
  6. Turn off the heat. Add mayonnaise, unsweetened ketchup, mustard, and 1 cup of cheddar cheese to the skillet. Mix well.
  7. Transfer the mixture to an air fryer-safe dish. Sprinkle the remaining cheese on top.
  8. Air fry the casserole at 400 degrees F until the cheese is melted and the casserole is heated through, approximately 10-12 minutes.
  9. Keep an eye on it, ensuring the cheese melts evenly and the casserole reaches the desired temperature.
