4 Ingredient No Bake Paleo Vegan Brownie Cookies (Keto, Sugar Free)- A quick and easy no bake cookie recipe made with no peanut butter and no banana! The perfect 5-minute snack or dessert! Low Carb, Gluten Free, Grain Free.

INGREDIENTS

For the Low Carb Option (Keto, Paleo, Gluten Free)

  • 2 cups chocolate spread of choice *
  • 1/2 cup sticky sweetener of choice **
  • 3/4 cup coconut flour
  • 1/4 cups stevia sweetened chocolate chips

For the Date-Sweetened Option (Paleo, Vegan, Gluten Free)

  • 3/4 cup raw almonds
  • 1/4 cup raw walnuts
  • 1 1/2 cups medjool dates
  • 1/4 cup cocoa powder
  • 1/4 cup chocolate chips of choice Optional

INSTRUCTIONS

For the Low Carb Option (Keto, Paleo, Gluten Free)

  • In a microwave-safe bowl or stovetop, melt your chocolate spread of choice with sticky sweetener of choice until combined.
  • Add your coconut flour and mix well until a dough is formed. Add your chocolate chips. Using your hands, roll small balls and place on a lined plate. Press each ball into a cookie shape and refrigerate until firm.

For the Date-Sweetened Option (Paleo, Vegan, Gluten Free)

  • In a high-speed blender or food processor, add your almonds and walnuts and blend until crumbly.
  • Add your dates and cocoa powder and blend well, regularly scraping down the sides to ensure the batter is well combined. Transfer the dough a large mixing bowl.
  • Using your hands, form small balls and place on a lined plate. Press each ball into a cookie shape. Top with some chocolate chips and place in the refrigerator until firm.

Notes

* You can use any chocolate spread, as long as it is sweetened.

** syrup, agave, and honey work best. For the keto option, use the monk fruit sweetened maple syrup.

4 Ingredient No Bake Paleo Vegan Brownie Cookies (Keto, Sugar Free) should be kept refrigerated, in an air-tight container. They are also freezer friendly too.
